30 Cozy Vegan Slow Cooker Recipes

If I could pick the most neglected appliance I own, it would be my slow cooker. The poor thing is just collecting dust in the cabinet. Which is ironic, because it’s legit the easier kitchen appliance to use EVER. It pretty much does all the work for you. All you have to do is turn it on and dump in your ingredients!

Why am I so mean to something that loves me so much?! I mean honestly, I’ve completely friend-zoned my slow cooker, but not anymore! My current goal is to get through all of these vegan slow cooker recipes this fall and winter, so my slow cooker should be feeling all warm and tingly (literally) inside with love.

Slow cooker recipes are the BEST because:

  1. They basically cook themselves.
  2. You can “cook” while you’re not even home or if you’re sleeping.
  3. You can freeze the extras for quick meals in the future.
  4. They make you feel all warm and cozy even when it’s freezing outside.
  5. You can transport food directly in your slow cooker, making it the perfect solution for potlucks, tailgate food and holiday recipes.

Have I given you enough reasons to dust off your slow cooker this season, or buy one if you’re currently lacking?? I hope so.

You all absolutely love my Vegan Slow Cooker Black Bean Soup (you have good taste!), so I thought you would enjoy this nice little round-up of vegan slow cooker recipes. We’re truly covering all our bases with plenty of vegan chilis and soups, slow cooker dinner recipes and side dishes, and even crockpot breakfast recipes! FAQs

Is a slow cooker worth it for vegetarian? ›

Though often associated with cooking budget cuts of meat, a slow cooker can make delicious work of veggies too, as our easy meat-free suppers attest… Interested in trying our FREE 7-day healthy diet plan?

Does a small slow cooker cook faster? ›

Size of your Slow Cooker

The size of your crockpot can affect the outcome of your meal. If your crockpot is smaller than what we recommend, you may need to cook your meal a little longer. If it's larger than what we recommend you may need to shorten the cooking time.

Why are my slow cooker meals watery? ›

If you notice a consistent trend with your meals being too runny or soupy, you may want to consider making adjustments before you begin cooking as there is a chance that your slow cooker isn't the right size or is failing to cook hot enough. Both reasons could lead to failure to evaporate enough water from the meal.

How do you make slow cooker meals taste better? ›

If you take an extra 10 minutes to sauté the aromatics before scraping them into the slow-cooker, the finished dish will have deeper flavor and better texture. (And some new slow-cookers allow you to sauté right in the insert, so you don't have to wash a separate skillet.)

Is it cheaper to use a slow cooker or a cooker? ›

Slow cookers typically cost less to run than an oven. They won't necessarily save you money compared with using an induction hob, or even a gas hob. Making exact comparisons is difficult, because there can be lots of variables, such as the type of hob and how you use it.

Is a slow cooker cheaper to run than an electric cooker? ›

While the slow cooker will be on for longer than if you cooked in an electric oven, that doesn't mean you'll be spending more on electricity as they use far less energy. In addition, slow cookers are suited to both cheaper cuts of meat and cheaper varieties of vegetables.

Is 4 hours on high the same as 8 hours on low in a slow cooker? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Is 3 hours on high the same as 6 hours on low? ›

Change cooking times depending on your schedule. One hour on HIGH generally equals two hours on LOW.

Is 6 hours on low enough for a roast? ›

Place roast into crockpot and surround with vegetables. Combine beef broth and vegetable soup mix, then add to crockpot. Cover and cook on LOW 6-8 hours or HIGH 3-4 hours.

Why do you put foil balls in a slow cooker? ›

It can help with cooking

This far side of your slow cooker apparently is prone to be hotter than the other side, and the foil helps keep the temperature even throughout. Wiggly Wisdom points out that the side benefit of using foil is the easy clean-up we all long for.

When should I add gravy granules to slow cooker? ›

Approx. 15 minutes before the stew is ready, add the gravy granules to the mixture and stir well.

Should I fry onions before putting in slow cooker? ›

It can be nice to cook the onions beforehand, as the flavour is different to when you put them in raw, but experiment both ways as you may find you prefer one. It can also be good to brown meat to give it some colour, but again, this is not essential.

Do onions go soft in slow cooker? ›

If you're around while the onions are cooking, stir them occasionally — this will help them cook more evenly, but isn't strictly necessary. After 10 hours, the onions will be golden-brown and soft, and they will have released a lot of liquid. If you like them as they are now, stop cooking and pack them up.

Should you stir slow cooker recipes? ›

Due to the nature of a slow cooker, there is no need to stir the food unless it specifically says to in your recipe. In fact, taking the lid off to stir food causes the slow cooker to lose a significant amount of heat, extending the cooking time required. Therefore, it is best not to remove the lid for stirring.

Does veg shrink in slow cooker? ›

The answer is yes. LiveStrong says cooking your food too long in a slow cooker can cause the ingredients to shrink and lose any tenderness they once had. However, other ingredients might turn mushy, which is also something no home cook is looking to achieve.

Is slow cooking good for vegetables? ›

: I know that boiling vegetables makes them lose some of their nutritional value. But what if you cook them in a slow cooker and eat the liquid the vegetables stewed in? Answer: Done right, veggies prepared in slow cookers can deliver disease-fighting nutrients and a delectable meal all in one bowl.

Is it worth using a slow cooker? ›

So, in conclusion, slow cookers are great. They're a convenient, cost-effective, and versatile kitchen appliance that can be used to make a wide range of delicious meals with minimal effort. Whether you're cooking for your partner or entertaining guests, a slow cooker is nice to have in any kitchen.

What are the advantages and disadvantages of a slow cooker? ›

While there are some disadvantages to using a slow cooker, such as the risk of overcooking food or forgetting to turn it off, these generally pale in comparison to the benefits. For busy families or those who enjoy coming home to a hot meal, a slow cooker can be a great addition to any kitchen.
