I can make bagels? At home? Yes! Yes you can. Not only will they be the best bagels you have ever had but they will be the easiest too.

Using the bread machine to do all of the heavy lifting for us, this recipe will only leave you to shape, boil, and bake your homemade bagels (and of course, pick your toppings-the best part)

Just dump the ingredients in your bread maker pan, push a button, and the mixing, kneading, and rising are all magically taken care of. Not to be dramatic, but my bread machine totally changed my life. Who has time to make weekly loafs of bread? Me actually, now that I have my bread machine. It’s like an extra set of hands around here. And these amazing bagels are no exception, they are defiantly being added to our weekly rotation.

  • 1/2 cup Warm water
  • 1/2 cup Warm milk
  • 1 Egg
  • 6 tbsp melted Butter
  • 1/3 cup sugar
  • 3 3/4 cup King Arthur Bread flour (or all purpose flour)
  • 2 1/4 tsp instant yeast
  • 1 tsp Salt

Optional:

  • Toppings: Toppings I used for this bagel bread machine recipe are Jalapeno and cheddar, everything bagel seasoning, sesame seeds, and a cinnamon sugar mixture.
  • 1 egg, 1 Tbsp of water for an egg wash. An egg wash will give your bagels that golden brown color.

Tools needed

  • Bread machine: I have an older bread maker I got from the thrift store and a newer model, both work great. The newer models have a lot more settings to work with, which I love. Settings such as making quick breads, jellies and even sourdough. These machines are worth the slight investment if you ask me!
  • Large saucepan: You’ll fill this with water to boil your homemade bagels
  • Baking sheet: You can use a silicone mat or just parchment paper. be sure to oil your parchament paper first to prevent your bagels from sticking.

First, Place all of your ingredients in the order listed above, (Water, milk, egg, butter, sugar, flour, salt and yeast) Set the bread machine to the “dough” setting and press start. The dough setting will mix the dough and allow for a dough rise.

When the machine cycle is done, punch down the dough in the pan and let it rest for 10 minutes. Remove dough from bread machine and divide it into eight equal pieces, then shape each piece of dough into a small ball by rolling it gently in a circular motion on the (un-floured) counter.

If you are making the jalapeño cheddar flavored bagels, I suggest taking your desired amount of dough pieces, and kneading the jalapeños and cheddar in before shaping the dough into balls. The flavor is phenomenal.

Once you form the dough balls, coat your finger in flour and press into the center of each dough ball to form a ring. Stick both pointer fingers inside the hole and swirl your bagel dough around your fingers, gently stretching the ring into a bagel shape. Cover bagels with a towel.

While bagels are resting, preheat oven to 350 and bring a large saucepan of water to a boil.

Place 2-3 bagels into the boiling water with a slotted spoon (or by gently lowering them into the water). Let bagels sit in boiling water for 1 minute, then flip and allow to sit in water for an additional 1 minute (the longer they are in the water, the chewier the texture will be).

Remove from water and place on baking sheet lined with a silicone mat or parchment paper. Using a pastry brush, brush bagels with egg wash (1 beaten egg and 1 tablespoon water).

Add desired toppings. To make multiple flavors of bagels in one batch, pour your toppings onto different plates. Dip each bagel into the different topping to create a multiple flavor batch of homemade bagels, or leave your bagels plain, if desired.

I have found that dipping the bagels into the toppings instead of sprinkling the toppings on creates a more even coated bagel, plus prevents the others from accidentally getting the other flavors on them, if making a multi flavored batch.

To make this recipe without a bread machine, just knead your dough for about 10 minutes by hand, or in the bowl of a stand mixer with a dough hook attachment for about 5 minutes then let the dough rise for 1 hour.Filling the same directions to shape, boil and bake from above, or on the recipe card at the bottom of this post.

Can I make these bagels in advance?

Yes! Just follow the recipe through shaping the bagels. Let the shaped bagels sit at room temperature for 15 minutes, and then put them in the fridge (covered in plastic wrap) overnight. In the morning, take out the bagels and allow them to come to room temp for one hour, and then boil and bake per the recipe. Then enjoy a fresh, chewy bagel for breakfast!

How to store homemade bagels

These bread machine bagels are best when eaten the day of baking.

You can store any leftovers in a zip-loc bag or sealed container on the counter. You may experience a bit of shrinkage as the bagels lose moisture. Keep in mind that these bagels don’t contain any preservatives, so like any homemade bread, they should be eaten within a few days.

You can also freeze the bagels, sealed tightly in a freezer bag.
