The BEST Crispy Homemade Sweet Potato Fries Recipe (2)

I love sweet potatoes and I love fries. So why not mix the two? Sweet potato fries are one of my all-time favorite side dishes and I’ve spent a lot of years researching and figuring out how to make them crispy and perfect. I have made and eaten far too many sweet potato fries that were burnt on one end and soggy in the middle so I took it upon myself to figure out the tips and tricks to make the best sweet potato fries on the block.

There’s a lot that goes into making a great sweet potato fry, but I’m here to tell you that going through the steps is worth the effort because you end up with perfectly seasoned, perfectly cooked, deliciously crispy sweet potatoes that are better than any you’ve had (even at a restaurant – you don’t find a better fry than these!).

How do you make sweet potato fries crispy?

Here are a few tips:
1. Soak the potatoes prior to cooking to help remove extra starch
2. Cut them very evenly so that they can cook evenly
3. Use the secret ingredient (cornstarch!) in your seasoning mix to add additional crunch when cooked
4. Don’t add salt until after cooking (the salt draws out moisture and that won’t help them crisp)
5. Flip the fries once during cooking so that they can brown on two sides
6. Let the fries cool for just 5 minutes before eating.
I know that it looks like a long list, but it’s worth it to get the perfect sweet potato fry!

Tips and Tricks for Making Sweet Potato Fries

  • Don’t skip any of the steps. You’ll want evenly cut taters to soak, coat, flip, and rest before eating if you want perfect sweet potato fries.
  • Feel free to change up the seasonings to meet your liking! There are so many great options that you can add. Want a little heat? Try adding some chipotle chili powder to your seasoning and cornstarch mix.
  • These are perfect with some dipping sauce! I love to use equal parts ketchup, mayo, BBQ, hot sauce, and mustard for a great sweet potato fry dipping sauce.
  • You can add the sweet potato fries to a big zipper-topped bag and use the bag to toss the fries in the oil and cornstarch mix easier (do the oil first and then add the dry mix).

Can you freeze sweet potato fries?

I have not had great luck with freezing this recipe. They sure don’t freeze before baking and they only froze ok after baking but I couldn’t get them to crisp back up when it came time to reheat and serve them. I would not freeze this recipe. These sweet potato fries actually don’t store well at all. I’d suggest making as many as you are going to eat and not more so that you don’t have leftovers. They just aren’t very good reheated.

Description

The BEST crispy homemade Sweet Potato Fries are made with a secret ingredient and a perfect spice blend, then baked to crisp perfection.

Ingredients

Scale

  • 1 poundsweet potatoes,peeled
  • 2tablespoons neutral oil (olive, vegetable, canola, etc. all work)
  • 2 tablespoons cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • table salt, to taste

Instructions

  1. Cut your sweet potatoes into 1/4 inch square fry-shaped pieces. Consistency in the thickness of the potato is key for evenly and properly cooked potatoes.
  2. Place the cut sweet potatoes in a bowl and cover with cold water. Let soak for at least 30 minutes or up to 12 hours (they can soak overnight without issue).
  3. After the sweet potatoes soak, remove from the water and pat dry with a clean dish towel or paper towels.
  4. Add the dry sweet potatoes to a large bowl or zipper-top bag and drizzle with the oil. Toss well to coat evenly.
  5. In a small bowl, combine the cornstarch, garlic powder, and smoked paprika. Sprinkle over the oiled sweet potatoes and toss again to evenly coat.
  6. Preheat the oven to 425 degrees F.
  7. Spread the sweet potatoes in an even layer on a parchment-lined baking sheet.
  8. Bake in the preheated oven for 15 minutes.
  9. Remove from the oven and use a spatula to flip every fry over, one by one.
  10. Return the oven and bake for an additional 10 to 15 minutes.
  11. Remove from the oven and sprinkle with salt.
  12. Let the fries rest for 5 minutes before serving warm.

Notes

FAQs

Why won't my sweet potato fries get crispy? ›

The secret to crispy (instead of soggy) sweet potato fries is to spread them out in an even layer with enough room so that they don't touch. This is especially important if you're making a big batch of fries. Instead of just piling more onto one baking pan, spread them out over two baking pans or cook them in batches.

What makes sweet potato fries better? ›

Sweet potato fries are slightly higher in calories and carbs than French fries but also high in vitamin A — giving them a nutritional edge. Still, deep-fried fries of any kind served in over-sized portions — as in many restaurants — may increase your risk of weight gain and related health problems.

Why don't my homemade fries get crispy? ›

If they are still not crispy you might have skipped a step or you might not have let them cool down sufficiently. Make sure to cool them in a single even layer and also make sure that the oil has the right temperature. Or maybe you've used the wrong potatoes to make them.

Why soak sweet potatoes before air frying? ›

If you'd like, you can soak the sweet potato slices for 30 minutes up to 2 hours before frying to remove excess starch. Personally, though, going through this step didn't make a real difference for my fries. Peels on or off — it's up to you!

Why does cornstarch make fries crispy? ›

Corn Starch: Adding a thin coating of corn starch to the potato fries before frying can help create a crispier exterior. When the corn starch comes into contact with the hot oil, it forms a barrier that traps moisture within the potato while also developing a crunchy crust.

How long should I soak potatoes for fries? ›

If you're pressed for time, the slightly sticky, cut potatoes should be soaked for a minimum of 15 minutes. However, a longer soak time may allow more starch to be removed. So, if you can prep the fries ahead of time, a few hours of soaking can help make them even crispier.

Why do you need to soak fries before frying? ›

Soaking your fries in cold water helps remove excess starch, which allows for crispy, golden fries! The cold water bath also helps the french fries retain their shape and contributes to a fluffy inside.

Why does baking soda make fries crispy? ›

But to give you the Cliff's Notes version, the baking soda alkalizes the water. It breaks down the pectin in the potato and brings the natural starches up to the surface. This, when combined with the pot shaking, contributes to deep browning and ultra crunchines that we're looking for.

Why are my sweet potato fries soggy in the air fryer? ›

Banish Soggy Sweet Potato Fries.

The sweet potatoes steam when crowded together, instead of air frying. For the best, most crispy results, cook the fries in a single layer so that the air has room to circulate.

What happens if you don t soak potatoes before making fries? ›

A: The main reasons to cut the potatoes and pre-soak in water are: To allow the excess starches and sugars to be removed from the outer surface of the fry strips AND to keep the potatoes from browning prematurely from exposure to air. Covering in water helps the potato from turning a dark color.

Why are my fried sweet potato fries soggy? ›

Don't try frying just once (or if you do… fry them starting off in cold oil). Sogginess is caused by moisture. You want to drive off the moisture from the outside but the inside also contains moisture which will turn to steam and evaporate through the crispy crust of the potato, turning it soggy again.

Why are my sweet potato fries dry? ›

Parboil them first if you're going to bake them

This can happen because the insides aren't quite cooked enough, but the outsides are beginning to dry out. Don't worry, sweet tuber lovers; there is a solution! This tip is a need-to-know to get the crispiest potato fries ever.

Why are my fries soggy and not crispy? ›

Fries have a very high starch content. When they are cooked at high temperatures, they absorb moisture which gives them their signature crispy exterior. When they are left out to cool, the starches secrete moisture, which eventually makes the fries' crust soggy.

Why are sweet potatoes hard to crisp? ›

Soak them. I was always a little skeptical when I read this in recipes, but it's essential. Soaking the sweet potatoes removes excess starch, which allows them to crisp up easier. You will want to put them in cold water for at least 30 minutes, but the longer you can go, the better.
